Pizza with Zucchini and Basil Pesto

Have you ever tried pizza with zucchini and basil pesto?  Fresh zucchini ribbons, basil pesto, pizza sauce and cheese create the perfect topping for this homemade pizza dough.

Ingredients: - pizza dough - zucchini - salt - pizza sauce - basil pesto - mozzarella cheese - Asiago cheese - basil leaves

Use a vegetable peeler to slice the zucchini lengthwise. Sprinkle with salt. Transfer to a colander set over a bowl for 30 minutes for the salt to draw out any extra moisture.

Gently pat dry the zucchini ribbons with a tea towel.

Spread pizza sauce over the surface of each stretched-out pizza dough.

Place the zucchini ribbons over the sauce slightly overlapping each other.

Spread the basil pesto over the surface of the zucchini ribbons.

Spread the grated mozzarella cheese and Asiago cheese over the top of the basil pesto. Bake in preheated oven.
