Ingredients: – flour  – eggs, separated  – sugar  – vanilla extract – roasted almonds – salt

Whisk the egg yolks with the sugar.  Add the vanilla extract and flour. The mixture will look like bread crumbs.

Incorporate the roasted almonds and gently fold the egg whites until everything is incorporated.

Divide the biscotti dough in half and place in greased loaf tins. Bake.

Remove from oven, wrap in clean dish towels and allow to cool down for a couple of hours.

With a serrated knife, use a sawing motion to slice cookies about ⅛-inch thick or thinner.
