Ingredients: – Asparagus – Olive oil – Shallot – Eggs – Fresh parsley – Fresh basil – Salt and pepper – Parmesan cheese

In a bowl, beat the eggs, grated cheese, parsley, basil, salt and pepper with a fork. Do not overbeat.

Sauté asparagus and shallots in olive oil. Pour in the egg mixture and stir gently. Allow the frittata to set and firm up.
