These orange-scented, honey-spiced Italian Biscotti Cookies enclose a filling of almonds and chocolate. This will quickly become one of  your favorite holiday cookies.

Cookie Dough Ingredients: – flour  – baking powder,     soda and salt – cocoa powder  – cinnamon, cloves – eggs  – orange juice, zest – almond extract – honey

Almond Filling Ingredients: – dark chocolate  – almonds – cocoa powder  – honey  – anisette liqueur – vanilla extract

Combine the ingredients to make the cookie dough, set aside.  In another bowl, combine the ingredients for the filling.

Roll out the cookie dough. Place the almond filling down the center of the dough at least 1 inch from the side.

Bring up dough to enclose the filling.

Apply gentle pressure to pat down the seal and smooth out the surface.

Brush egg wash on the surface of the biscotti logs.
