Ingredients: -squash -olive oil -onions -ginger -pears -broth -herbs -seasonings

Remove seeds and season the butternut squash halves with olive oil, salt and pepper.

Place your seasoned squash cut-side down onto the baking sheet and roast for 45 minutes to 1 hour.

Sauté diced onions until soft, about 5 minutes. Add the grated ginger and sauté for a minute or so.

Add the stock, squash, chopped pears, and bay leaf. Simmer for 15 minutes. Use handheld blender to process until smooth. Garnish and enjoy!
