This recipe for cast iron skillet potatoes is simple to make and so delicious!  The perfect side dish for any meal.

Ingredients: – Red or Yukon Gold    potatoes  – vegetable oil – Kosher salt  – black pepper  – rosemary

Slice potatoes in quarters lengthwise. Then cut each quarter into 1-inch pieces.

Preheat the cast iron pan. Add the oil. Heat until shimmering then add the cubed potatoes. Cook covered for 20 minutes until golden brown.

Remove the lid. Increase heat to medium. Flip the potatoes, and continue cooking, uncovered, for about 10 minutes, flipping as necessary. Season, serve and enjoy!
