Chocolate Cake with Ricotta Cheese Filling

Ingredients: – eggs – vanilla extract – cocoa powder – sugar – ricotta – light cream – sugar – chocolate chips – water – Rum

Whisk the egg whites until soft peaks form. Add the sugar and continue to beat until stiff peaks form.

In a separate bowl, whisk together the cocoa and sugar. Whisk together with egg yolks and extract until smooth. Incorporate the egg whites by folding gently.

Spread batter evenly in the prepared jelly roll pan and bake for approximately 20 minutes or until the cake springs back when lightly pressed.

Once the cake is at room temperature, cut into thirds. Brush the top with the rum syrup. Spread ½ of the ricotta cheese filling. Repeat for the other layer.

Spread the chocolate ganache over the entire surface and sides. Chill the cake for at least an hour before serving and enjoy!
