Ciambotta, also known as giambotta, is a traditional southern Italian vegetable stew. Easy, economical and great for meal prep.

Ingredients: olive oil – onion – garlic – tomato paste – tomatoes – passata – zucchini – eggplant – potatoes – peppers – fresh herbs – salt/pepper

Heat olive oil in a large soup pot over medium heat. Sauté onions followed by garlic, and tomato paste.

Add the tomatoes, and passata. Bring to a gentle simmer.

In a second pot, heat olive oil. Add the rest of the vegetables and cook until they soften slightly.  Combine with tomato mixture and simmer for approximately 20-30 minutes.

Add the chopped fresh herbs, taste and adjust for salt and pepper. Enjoy with a nice slice of Italian crusty bread!
