A signature crunchy sugar glaze gives this family recipe for egg taralli just the right amount of sweetness to create a simple Easter cookie.

Ingredients: – flour – baking powder – salt – eggs – sugar – vegetable oil – vanilla extract – zest of one lemon – sambuca

Whisk the eggs for 4-5 minutes or until double in volume. Add the sugar, oil, extract, Sambuca and lemon zest and whisk for a few minutes.

Switch to a dough hook and add the dry ingredients. Knead for approximately 7-10 minutes.

Allow the dough to rest for 30 minutes, then shape into little dough balls.

Use your thumb and forefinger to pinch the middle of the dough ball to create a hole. Gradually enlarge the hole while shaping the dough into a round donut shape.

Transfer a tarallo to a pot of hot water. Once it rises to the top transfer it to a tea towel to drain.

Take each tarallo and use a sharp knife or razor blade to make a shallow cut around the circumference.

Bake until until cracked, golden brown and light to the touch.
