If you’ve never had fregola before, it’s time to add this delicious Italian ingredient to your shopping list and make this Fregola Salad!

Ingredients fregola pasta – Corinthian raisins – olive oil – red wine vinegar – fennel – black olives – fresh herbs – salt and pepper – walnuts  – roasted red peppers

Boil fregola pasta for 12-15 minutes or until al dente. Drain and transfer to a large mixing bowl.

Add the vinaigrette to the fregola and toss gently with a wooden spoon. Add the rest of the ingredients and toss to combine.  Enjoy warm or cold.
