Ingredients: - Italian eggplant - salt - olive oil - balsamic vinegar - garlic - dried oregano - fresh parsley

Slice the eggplant into ¼-inch thick half moons. Set over a bowl and sprinkle with kosher salt. Wait 30 minutes then pat dry.
