You will love this fresh summer salad featuring grilled peaches and juicy heirloom tomatoes. This grilled peach salad is perfect for BBQs, picnics, or a light vegetarian meal.

Ingredients: - ricotta cheese - peaches - tomatoes - olive oil - white wine vinegar - Dijon mustard - lemon juice - salt and pepper - basil

Whip ricotta with a hand mixer until smooth and creamy. Set aside in the fridge.

Place the peach slices on a hot grill and cook for 2-3 minutes on each side until grill marks appear and the peaches are caramelized.

In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, lemon juice, salt and pepper. Set aside.

Spread ricotta on the bottom of your serving platter. Add the tomatoes and grilled peach wedges. Drizzle the mustard vinaigrette. Add fresh basil leaves and enjoy!
