Ingredients: – beets  – olive oil – kosher salt

Trim all but 1 inch of the leaves and most of the root end.

Thoroughly rinse the beetroots under cold water to remove any excess dirt.

Line a baking sheet with parchment paper. Rub the raw beets with olive oil; sprinkle with salt.

Roast 45-60 minutes at 400°F/205°C until you can easily insert a paring knife with little resistance.

To peel the beets, rub the skin off with a paper towel or your fingers. You may need to use a paring knife or a vegetable peeler to remove any stubborn bits. Enjoy!
