There are many different ways to cook fish, but once you try this method of poached Italian fish, or acqua pazza, it will quickly become one of your favorites.

Ingredients: – olive oil – garlic and shallots – red pepper flakes – cherry tomatoes – capers – bay leaf – wine and water – parsley – cod fillets – salt and pepper

Heat olive oil in a saucepan.  Saute the vegetables until soft. Deglaze pan with the white wine, followed the water. Add parsley and bring to a simmer.

Add the cod fillets and simmer for 12-15 minutes or until the fish is opaque, and you can flake it apart with a fork.
