Ingredients: – Oats – Buttermilk – Flour – Baking powder – Baking soda – Salt – Poppy seeds – Sugar – Egg – Vegetable oil – Vanilla extract – Lemon juice/zest

Combine the ground oats with buttermilk in a bowl. Let them soak for 10 minutes.

Whisk together the dry ingredients in a large bowl. Set aside for now.

Whisk together the egg with brown sugar followed by the rest of the wet ingredients and the lemon zest.

Gently fold the wet and dry ingredients with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

Spoon the batter into the prepared muffin cups filling each about two-thirds full. Sprinkle with coarse sugar. Bake at 400°F (200°C) for 20 minutes and enjoy!
