Ingredients: – Onions – Red bell peppers – Garlic cloves – Eggplants – Zucchini – Roma tomatoes – Olive oil – Oregano – Thyme – Salt and pepper

Slice the onions, red bell peppers, eggplant, zucchini, summer squash, and tomatoes. Roughly chop the garlic.

In a large skillet, sauté the sliced onions until softened. Toss in the bell peppers, sauté for another 3-5 minutes, then add garlic and sauté for 1 minute.
