Orzo Risotto with Peas and Asparagus

In under 20 minutes, create this quick healthy orzo risotto with peas and asparagus. Add chickpeas or cooked chicken for a complete meal.

Ingredients - olive oil - shallot  - garlic minced - vegetable  - orzo pasta - asparagus  - peas  - Parmesan cheese - parsley

Saute shallot and minced garlic in olive oil. Saute for about 3-5 minutes until softened.

Add the stock and the orzo pasta.  Simmer for 8-10 minutes.

When done, the orzo will still be a bit "wet". This slight moisture will be reabsorbed with the addition of the rest of the ingredients.

Stir in the cooked peas, asparagus, grated cheese and minced parsley. Serve immediately and enjoy!
