This rhubarb coffee cake recipe is quick and easy to make, with the perfect balance of tart and sweet. No mixer needed. Great for breakfast, brunch or dessert!

Ingredients: – flour – baking powder – baking soda – brown sugar  – vegetable oil  – egg  – buttermilk  – vanilla extract – rhubarb, chopped – turbinado sugar

Add dry ingredients to the wet ingredients and combine with a wooden or rubber spoon. Do not over mix.

Add the chopped rhubarb to the cake batter and combine gently together.

Transfer batter to prepared pan. Sprinkle with turbinado (or raw) sugar. Bake in preheated oven for 60 minutes until golden and enjoy!
