Ingredients: – small potatoes – carrots – shallots – olive oil – paprika – salt – black pepper – herbs – lemon juice

Preheat the oven to 400°F/205°C. Add halved potatoes, carrots, shallots, herbs and spices to the roasting pan. Toss with olive oil and bake covered for 20 minutes.

Uncover and roast for an additional 30-35 minutes or until the vegetables are golden and crispy. Remove from the oven, toss with lemon juice and enjoy!
