Italian Struffoli are puffy balls of fried dough, that are crispy, light and airy. They are drenched in citrus-scented honey and decorated with festive sprinkles.

Ingredients: – flour – eggs – white wine – vegetable oil – sugar – salt – grated lemon peel – vanilla and rum extract – honey – festive sprinkles

On a wooden board, shape flour into a well. Add the ingredients in the center and knead together.

Knead for about 10 minutes or until shiny and smooth. Wrap the dough in plastic wrap and allow it to rest at room temperature for one hour.

Cut the dough into 8 pieces of dough.

Roll out each piece of dough into a long rope about ½ inch in diameter. Cut them into ½ inch pieces.

Fry the dough in batches. Transfer to paper-lined tray to drain and then in a large bowl. Combine with warm honey and enjoy!
