This Vegan Pizzelle Recipe is a variation of the classic Italian flat cookie. I used "flax eggs" resulting in the best, crispy plant-based Italian pizzelle.

Ingredients: -flaxseed -water -flour -baking powder -salt -sugar -oil -vanilla extract

Whisk the ground flaxseed and water in a small bowl. Let it sit for 5-10 minutes to thicken. In a mixing bowl, sift or whisk together the dry ingredients. Set aside for now.

Whisk together the “flax eggs” with sugar, oil and extract. Slowly add the dry ingredients. Mix until you have a smooth batter. Let it sit for 5-10 minutes.

Drop a spoonful of batter on pizzelle maker. Close the lid and bake. Remove the pizzelle and place them on a flat surface.  Repeat and enjoy!
