Ingredients: – olive oil – onion – herbs – chili flakes – garlic – carrots, celery – tomato paste – vegetable stock – pearled barley – lemon juice

Add olive oil to a pot. Sauté onions with thyme and chili flakes until soft. Add the carrots and celery; cook until they soften. Add garlic and tomato paste and sauté.

Add the vegetable broth, pearled barley, and bay leaf; simmer for 1 hour.  Taste and adjust seasonings. Garnish with chopped parsley, lemon juice and enjoy!
