How to Make Zucchini Frittata

This Zucchini Frittata  is ideal for any mealtime – from breakfast to dinner- and brings garden-fresh goodness to your table.

Ingredients: – olive oil – shallot – zucchini – red pepper – eggs – Parmesan cheese – mozzarella – ricotta – fresh herbs – salt and pepper

In a large bowl, whisk together eggs, ricotta cheese, grated Parmesan cheese, and herbs. Set aside.

Heat olive oil in an oven-safe skillet over medium heat. Add the zucchini, red peper and shallot to the skillet and sauté until tender.

Pour the egg mixture over the vegetables and cook until beginning to set. Add the grated cheese, broil for a few minutes and enjoy!
