This air fryer eggplant is an amazing recipe for a gluten-free, vegan and healthy side dish that is great with almost any main meal. Super quick and easy to prepare.
Rinse and pat dry the eggplant. There is no need to peel them.
Dice the eggplant into ¾-inch pieces.
Transfer to a large bowl.
Add the oil and toss properly together.
Now that the eggplant is lightly coated with the oil, add the rest of the spices and seasonings.
Toss together properly ensuring each eggplant cube is properly seasoned.
Place in the air fryer basket, in a single layer, without overcrowding them.
Air fry for 15-18 minutes, or until golden and easily pierced with a fork.
Depending on your model, it may be necessary to shake once or twice during the roasting time.
Remove from oven, taste, adjust seasonings and serve immediately.
As an option, garnish with chopped fresh parsley.
