Slow Roasted Pumpkin Seeds

  • 2 cups pumpkin seeds fresh from 1 pumpkin
  • 1/4 teaspoon Himayalan pink salt or kosher
  • 1 tablespoon extra virgin olive oil


  • Preheat oven to 300°F.
  • Coat baking pan with non-stick cooking spray.
  • In a medium bowl, toss the seeds, salt and olive oil together.
  • Spread seeds evenly on baking sheet.
  • Place in oven and roast for about 45 minutes. Stir the seeds every 10 minutes or so.
  • Cool and serve.
