Slow Roasted Pumpkin Seeds

- 2 cups pumpkin seeds fresh from 1 pumpkin
- 1/4 teaspoon Himayalan pink salt or kosher
- 1 tablespoon extra virgin olive oil
Preheat oven to 300°F.
Coat baking pan with non-stick cooking spray.
In a medium bowl, toss the seeds, salt and olive oil together.
Spread seeds evenly on baking sheet.
Place in oven and roast for about 45 minutes. Stir the seeds every 10 minutes or so.
Cool and serve.
Total yield: 2 cups
