Easy Grilled Chicken

  • 1 teaspoon fennel seeds
  • 1/2 teaspoon coriander seeds
  • 1/4 teaspoon black peppercorns
  • 4 pounds chicken parts (legs, thighs and/or breasts) with skin on 1.8 kg
  • 4 tablespoons olive oil separated
  • 1 bulb fennel cut into wedges (8-10 depending on the size)
  • 4 peaches fresh, pitted and halved (leave the skin on) [can also use apricts]
  • 2 tablespoons honey
  • 1 lime cut into wedges
  • 2 tablespoons fennel fronds
  • 1 tablespoon chives fresh, chopped
  • salt and pepper to taste


  • Preheat your indoor or outdoor grill.
  • Set temperature to high, make sure to oil the grates of your grill.
  • Crush the spices together with the help of a mortar and pestle (a pepper grinder also works).
  • Rub 2 tablespoons of the olive oil over the entire chicken pieces.
  • Rub the spices over the entire chicken, both over and under the skin.
  • Season with salt and pepper.
  • Place the seasoned chicken on the grill, close the lid and reduce the temperature to medium low.
  • Turn frequently until cooked.
  • In the meanwhile, rub 1 tablespoon olive oil on the fennel wedges and place on the grill. Cook until tender, approximately 6-10 minutes, depending on the size of the wedges.
  • Brush cut side of peaches with last tablespoon of olive oil.
  • Place peaches (or apricots) cut side down on greased grill.
  • Close lid cover and grill until peaches have softened, approximately 6-10 minutes, depending on the size of the peaches.
  • Remove chicken, fennel and peaches from the grill and place on a large serving platter.
  • Drizzle with honey.
  • Garnish with lime wedges, fennel fronds and chopped chives.
