Another cookie recipe!!! These Spiced Cakey Apple Cookies come together in no time at all - all the more chance for you to enjoy the beautiful fall weather.
Add-ins:½ cup dried cranberries or nuts or chopped dates or raisins or chocolate chipsoptional
Instructions
Preheat oven to 350℉/175℃. Set rack in the center of the oven.
Line baking sheet with parchment paper. Set aside.
Whisk together both flours, baking soda, spices and salt in a medium bowl. Set aside.
In a large mixing bowl (of stand mixer), with whisk attachment, on high speed, beat the butter with the sugar until light colored. (3-4 minutes)
Add eggs, one at a time and mix well. Make sure to scrape down the bowl after each addition.
With mixer on low speed, add half the flour mixture, followed by all the milk, followed by the other half of flour mixture. Mix until just combined.
Gently combine grated apple and add-in(if using).
With a medium sized scooper, place dough on baking sheet.
Bake for approximately 15 minutes.
Cool on wire racks.
Notes
If desired cookies can be glazed just before serving. Whisk together ⅓ cup icing sugar with 1 ½ teaspoon of maple syrup and 1-11/2 teaspoon of water. Glaze will be runny. Can be adjusted to your own preference.
