Escarole and white bean soup, often referred to as Italian greens and beans, is the ultimate Italian comfort food recipe. Healthy, delicious and so easy to make!

Ingredients: – onion – garlic – celery – vegetable stock – white beans – escarole – salt and pepper

Drizzle olive oil in a large pot. Add the onion and saute until soft. Add the garlic and celery and saute for as few more minutes. Season with salt and pepper.

Add the vegetable stock and simmer for 20 minutes. Add the canned white beans and simmer for another 10 minutes or so.

Add the coarsely chopped raw escarole and simmer until the greens are tender. Garnish with freshly grated cheese, chopped parsley, olive oil and a squirt of lemon juice.
