These Italian Oven Roasted Potatoes will quickly become your favorite side dishes. Crispy on the outside; soft and tender on the inside.

Ingredients: – red potatoes – olive oil – fresh herbs – garlic cloves – salt – black pepper

Peel and cut potatoes. Soak them in a large bowl of cold water for a minimum of 20 minutes or up to 2 hours.

Drain the water from the potatoes and pat dry. In a large bowl, toss with olive oil, herbs and spices.

Arrange the potatoes in a single layer, with the cut side down in a roasting pan. Roast for 1 hour. Remove from oven. Garnish with fresh herbs and enjoy!
