How to Make Sauteed Zucchini

Trim off the ends and cut the zucchini into ¼ inch rounds.

Salt and allow to sit for 20-30 minutes.

To avoid soggy zucchini, drain excess moisture by salting then draining in a colander for 30 minutes.

Pat dry to remove excess moisture and salt.

Cook undisturbed until browned around edges.

Taste and adjust for seasoning.

Garnish with extra parsley or oregano and cheese, if desired.
