- 1 small watermelon 5-6 pounds
- 4-6 ounces feta cheese
- 1/2-1 cup of loosely packed mint leaves minced
- extra mint leaves for garnishing
- 1 tablespoons balsamic vinegar
- 3 tablespoons olive oil extra virgin
With a melon baller, scoop out the watermelon and drop in a large mixing bowl.
Gently toss together melon balls, crumbled feta cheese and minced fresh mint.
In a small bowl, whisk together vinegar and olive oil to make the vinaigrette.
Drizzle over salad.
Garnish with mint leaves.
