Ingredients

  • 1 small watermelon 5-6 pounds
  • 4-6 ounces feta cheese
  • 1/2-1 cup of loosely packed mint leaves minced
  • extra mint leaves for garnishing

Balsamic Vinaigrette:

  • 1 tablespoons balsamic vinegar
  • 3 tablespoons olive oil extra virgin

Instructions

  • With a melon baller, scoop out the watermelon and drop in a large mixing bowl.
  • Gently toss together melon balls, crumbled feta cheese and minced fresh mint.
  • In a small bowl, whisk together vinegar and olive oil to make the vinaigrette.
  • Drizzle over salad.
  • Garnish with mint leaves.
  • Serve immediately.
