    In an attempt to beckon spring, or at the very least some warmer weather, I decided to take matters into my own hands by making this Refreshing Creamy Pineapple Coleslaw recipe.

    Spring is less than ten days away – at least that’s what the calendar would like for us to believe. Anyone living in the east coast would definitely agree that spring has not yet sprung! So, despite the snow and cold weather, I bought a pineapple thinking at least my taste buds could experience something refreshing.

    Truth be told, this is my “all seasons” go-to recipe for large get-togethers. It’s super easy to put together and it just is the most refreshing coleslaw, whether served as a side salad or tucked into your favorite burger. The flavor combination of pineapple, coconut and currants simply works.

    This colorful coleslaw salad is just one example of how versatile cabbages can be. The bright green color and crunchy texture make it a great choice for summertime, but don’t forget about its versatility in winter too! If you’re looking to spice up your dinner menu with more refreshing salads, be sure to try this fennel or red cabbage slaw.

    Recipe origins

    The original recipe for this Refreshing Creamy Pineapple Coleslaw can be found at food.com. It’s a great basic recipe that allows you to add your favorite ingredients. Over the years,  I’ve incorporated suggestions made by family and friends. Don’t be hesitant to incorporate different ingredients. There are very few “perfect” recipes. My philosophy is that recipes become perfect when you adapt and personalize them to your needs.

    Ingredients

    • 1 head cabbage shredded
    • 2-3 carrots shredded
    • 14 ounce crushed pineapple can, drained (reserve liquid) or 2 cups fresh pineapple diced
    • ⅓ cup coconut unsweetened, desiccated
    • ⅓ currants
    • ⅔ cup mayonnaise light
    • ½ cup yogurt
    • 2 tablespoons pineapple juice or if using fresh pineapple, granulated sugar
    • 1 tablespoon lemon juice freshly squeezed
    • ¾ teaspoon salt
    • ½ teaspoon dry mustard
    • ½ cup nuts chopped, toasted optional

    Instructions

    • Combine all ingredients (except nuts - if using).
    • Refrigerate for at least 1 hour.
    • Sprinkle nuts (if using) on surface and serve.
