    This fruit parfait recipe features layers of whipped ricotta cheese, fresh fruit, and crunchy granola. It is easy to assemble and can be prepared ahead of time.

    Are you ready to try something new?

    Traditionally, parfaits are made with yogurt, fresh fruit, and granola. But imagine swapping out the yogurt for something equally delicious and surprisingly light—ricotta cheese!

    After discovering whipped ricotta’s creamy, airy texture in this strawberry ricotta dessert, I couldn’t resist using it as a fresh alternative to yogurt to create the best whipped ricotta fruit parfait recipe! 

    Ricotta cheese has a smooth texture and a slightly tangy flavor that complements the fruit’s natural sweetness and the crunch of granola.

    The best part about this parfait recipe is how customizable it is. I also love how quick and easy it is to prepare.

    The dietitian in me loves that ricotta cheese has a lower fat content (10.3g per 100g) compared to whipped cream (36.1g per 100g) and mascarpone (50g per 100g), making it a lighter and healthier choice when compared to other desserts. [source]

    Whether making parfaits for a family gathering, a healthy snack, or a quick breakfast, you can enjoy the flexibility and creativity of assembling these delicious and nutritious treats.

    When making them for breakfast, I like to use mason jars, which are great for breakfast prep and perfect for on-the-go meals.

    For brunch or dessert, I use parfait glasses and serve this fruit and ricotta recipe with long-stemmed spoons, adding an elegant touch, as shown in the picture above. This makes them ideal for any occasion.

    Ingredients

    • Ricotta cheese: This Italian cheese serves as the base for your parfait. Draining removes excess moisture, resulting in a thicker, smoother texture that blends beautifully with the other ingredients. You can make your ricotta cheese or use a commercial brand.
    • Honey: Adds a touch of sweetness to the ricotta mixture. Maple syrup or agave nectar can be used as alternatives for a different flavor profile.
    • Vanilla yogurt: This adds a smooth texture and a hint of vanilla. You can use plain Greek yogurt and add a splash of vanilla extract.
    • Fresh fruit: Use a variety of your favorite fruit to add color and flavor to your granola parfait. Options include strawberries, blueberries, raspberries, peaches, and more. The freshness of the fruit will enhance the overall taste and presentation.
    • Granola: Adds a satisfying crunch and a nutty flavor that contrasts nicely with the creamy ricotta and fresh fruit. You can make a homemade crunchy granola or use a commercial brand. 
    • A sprig of mint (optional): This herb provides the perfect garnish for our parfait.

    Let’s prep our recipe

    Removing excess moisture: Whenever I use store-bought ricotta, I like to drain it to remove excess moisture. Up to 12 hours (minimum 1 hour) before I need it, I measure out a heaping cup of ricotta (about 270 grams) and place it in a coffee filter set in a sieve over a bowl. Cover it with plastic wrap and refrigerate to allow excess moisture to drain.

    Whipping the ricotta cheese: Using a small food processor or a handheld immersion blender, combine approximately 250 grams of drained ricotta cheese with 2 tablespoons of honey and 2 tablespoons of vanilla yogurt. Whip the mixture for at least 3-5 minutes until the texture becomes smooth and creamy. Taste for sweetness and adjust for personal taste. Scrape down the bowl a few times during the process to obtain the perfect consistency. Cover and refrigerate the mixture for at least 1 hour to let the flavors meld together. It can be made up to 24 hours ahead of time.

    Prepare the fresh fruit: Rinse 1 cup of fresh strawberries and blueberries under cold water. Pat them dry with a clean towel. Hull the strawberries and dice them into small pieces. Set them aside for now.

    How to assemble

    There’s no perfect way to layer these three elements when making a parfait! The beauty of a parfait lies in its versatility and the freedom to customize it according to personal preferences. 

    The goal is to create alternate layers of fruit, whipped ricotta, and granola for a visually appealing effect. Repeat the layers until the glass is full. Top with granola, some fruit and garnish with a sprig of mint if desired.

    By experimenting with these garnishing ideas, you can create a fruit parfait that looks as good as it tastes:

    • Mint leaves: A small sprig of mint on top of your parfait adds a pop of green and a refreshing aroma
    • Nuts and seeds: Sprinkle chopped nuts or seeds like almonds, roasted hazelnuts, or chia seeds for added crunch and nutritional benefits. 
    • Coconut flakes: Toasted coconut flakes can add a tropical flair and a delightful crunch. Lightly toast them in a pan until golden brown before sprinkling them over your parfait.
    • Cinnamon or nutmeg: A light dusting of ground cinnamon or nutmeg can add a warm, spicy note. 
    • Shaved chocolate: For a decadent twist, add some dark chocolate shavings on top.

    How do I properly drain ricotta cheese?

    Place ricotta cheese in a fine-mesh strainer, a coffee filter or a cheesecloth-lined colander to drain it. Let it sit in a bowl in the refrigerator for at least an hour to remove excess moisture. This step ensures a thicker, creamier texture for your parfait.

    Can I prepare the fruit parfait ahead of time?

    Yes, you can! Assemble the layers of whipped ricotta, fresh fruit, and granola in a jar or container and store it in the refrigerator. To avoid soggy granola, you may want to combine it with the rest of the ingredients just before serving it.

    Can I use frozen fruit in this parfait recipe?

    Recipe inspiration

    This parfait recipe is a variation of my strawberry ricotta dessert with the addition of my homemade granola recipe. 

    I’ve been enjoying a variation of this dessert for decades. The combination of fresh fruit and ricotta cheese is a favorite in my home.

    Ingredients

    • 1 cup ricotta cheese drained, 250 grams
    • 2 tablespoons honey
    • 2 tablespoons creamy vanilla yogurt
    • 1 cup strawberries rinsed, hulled, chopped (140 grams/5 ounces)
    • 1 cup blueberries rinsed (140 grams/5 ounces)
    • ½ cup granola

    Instructions

    • Combine ricotta, honey, yogurt and process until smooth and creamy (can use hand-held beater, hand blender or food processor).
    • Transfer to a bowl, cover and refrigerate for at least 1 hour.
    • While waiting, rinse, hull, and dice strawberries.

    The assembly:

    • Divide whipped ricotta, berries and granola among glasses (or serving dishes). Repeat to create layers.
    • If desired, garnish with mint leaves and enjoy!
